My Food: Mexican Shrimp Tacos


We made these the other day and they were delicious, not to mention, they took very little time to prepare and cook!

Yields: 4 tacos

Ingredients:
12 oz medium, pre-cooked shrimp (thawed if frozen)
2 tablespoons taco seasoning
1 tablespoon olive oil
Juice of 1 lime
4 whole wheat tortillas
1 tomato (chopped)
1 avocado (chopped)
Cheese (if desired, light sprinkle)

Directions:
1. In a skillet, cook the shrimp in the olive oil and sprinkle on the spices in the last few moments of cooking.
2. Mix well.
3. Sprinkle the lime juice over the shrimp just prior to serving.
4. Serve on whole wheat tortillas with tomato, avocado, and cheese
