I absolutely love this salad, and my husband actually craves it. He asks for it at least a few nights a week. The recipe is easy to make, uses clean foods, and tastes great.
Yields: 1 serving
Ingredients:
1 ½-2 cups spinach, washed
2-3 strawberries, sliced
1 Tbsp Feta Cheese
8-12 Walnuts, (I cut these in halves or fourths) (For a less healthy option, my husband likes candied walnuts or praline pecans)
1-2 Tbsp Raspberry Vinaigrette Dressing
Directions:
Combine all ingredients in bowl, drizzle dressing on top, and serve.
Note: I used to make this salad with cherry tomatoes rather than strawberries, but we love the sweetness of the strawberries. Feel free to substitute.
